Sweet and tart with the pure essence of ripe summer cherry flavor, this jelly is my best seller.
2 cups of roasted butternut squash (cut it in half, take out the seeds, and roast cut side down with a little water in the bottom of the baking dish at 375 for about 40 minutes)
mix in 3 tablespoons heavy cream, one sauteed minced shallot, salt, and pepper to taste
puree in a food processor and add 1T. of the squash mixture to fill your fresh pasta squares, or use wonton wrappers from the store. They freeze beautifully! I serve mine with a sage, butter, and cream sauce with fresh parmesan cheese!
